Is the maximum temperature of 600°C enough for performing pyrolysis?

yes, most (co-)polymers degraded by temperatures lower than 600 °C. When you check pyrolysis publications you will find that most of them stay below 600°C. You can find references here.

Since 2021 there is an OPTIC-4 available with a maximum temperature of 700°C. The OPTIC-4 Pyro is similar to the standard OPTIC-4 but we made some changes on the heater board to be able to reach 700°C.
